With a 7 PM arrival time into Fiumicino, taking the Leonardo Express into Termini to connect to the train to Florence might be the most practical because the trains stop running after 10 or so. Also, I would recommend buying the ticket on the Trenitalia website to insure that you find the seat on the train you need, as certain times might be sold out. Buy something to eat on the train at the station and Enjoy!
